Vinification

The Angiuli Donato Nero di Troia (Puglia IGT) is produced from hand-harvested grapes, featuring gentle pressing and maceration with a lauter bottom, followed by controlled-temperature fermentation for about 10 days. It is typically matured in stainless steel tanks, ensuring a fresh, polyphenol-rich, and intense-coloured wine marketed shortly after bottling.
